Indian Scramble
1/2 Cup almonds, soaked overnight
1/2 Cup sunflower seeds
1/4 Cup water
1 1/2 tsp turmeric
1 tsp cumin
1/2 Cup spinach, chiffanade
1 tomato, small dice
2 Tbsp Cilantro, minced
2 Tbsp onion, small dice
salt
- In a food processor, combine soaked almonds and sunflower seeds and blend until coarse, then add water and spices and process into a chunky scramble.
- Remove and place in a bowl. Fold in spinach, tomato, onion and cilantro.
- Season to taste.
This is a great way to start your weekend.
